Bikini

Serves 10 people

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Place all the ingredients into a pot, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the stove allowing it to cool entirely. Decant into a sterilised bottle, cap it and refrigerate it chilled, it will last for up to a month.

Preparing the Cocktail Base: Mix all the spirits and syrup into a big jug, allow it to infuse for an hour, then filter it best through cheesecloth, making it perfectly clear.

For serving: Add 85ml of the cocktail base to a stirring glass containing ice, and stir gently for about 60 seconds until cold. Strain to a cold coupe glass or similar, top with the cranberries adding the final touch using a brief mist of the essential oil above the glass.
